Coxinhas recipe with mashed potatoes

Ingredients for making Coxinhas with mashed potatoes:

For mass:

 1 tablespoon of margarine

 1 cup of milk (240 milliliters)

 1 teaspoon of colorific

 1 cup of cooking chicken broth

 1 cup of instant mashed potatoes

 3 cups of wheat flour (420 grams)

 1 chest of salt

For the filling:

 1 crushed garlic clove

 ½ unit of chopped onion

 1 unit of chicken breast

 ½ cup of milk (120 milliliters)

 1 tablespoon of margarine

 1 tablespoon of colorific

 1 tablespoon of wheat flour

 green smell

 salt

 Black pepper

To fry:

 1 egg unit

 1 cup of breadcrumbs

 oil

How to make Coxinhas with mashed potatoes:

To make coxinha with mashed potatoes, start by preparing the mashed potatoes according to the manufacturer's instructions. Meanwhile, cook the chicken breast in a pan of water until tender.

To make the coxinha potato dough, melt the margarine in a pan and add the milk, salt, colorific and chicken stock. When it boils, add the wheat flour and stir everything until it comes off the bottom of the pan. Turn off the heat, add the puree, add the salt and mix. Let cool.

In another pan, prepare the coxinha filling: heat the margarine and saute the onion with the garlic and the colorifico until the onion is soft. Add the chicken, the green scent and the milk, season to taste with salt and pepper and mix. Add the flour, stir well until it comes off the bottom and turn off.

Use portions of the dough to make balls. Open each ball in the palm of your hand and add the filling. Close it tightly and shape it into a drumstick shape. Pass each drumstick in the beaten egg and then in the breadcrumbs.

Heat the oil in a pan and fry your homemade drumsticks until golden. Place them on paper towels to drain excess oil.
